One of my most favorite Muffins, which I think is the King of all Muffins, is the ‘Banana Nut Muffin’. I just can’t believe that I made the Eggless version of these Muffins right in my Kitchen. They came of really well. Very soft and Fluffy. These Muffins filled the Room with the Banana Flavor. The Ingredients part of the Recipe I followed Saffron Hut’s recipe for Banana Nut Muffins. I am really thankful to her for sharing the wonderful Recipe. Here is how I made the Muffins.
Ingredients:
For 12 Muffins:
Ripe Bananas - 4
Sugar – ¾ Cup
Melted Unsalted Butter – 1/3 Cup
Baking Powder – 1 teaspoon
Baking Soda – 1 teaspoon
All Purpose Flour – 1 ½ Cups
Half Cup Walnuts – Finely Chopped
Method:
Preheat Oven to 375 degrees F.
Line the Muffin Pan with the Muffin Liner Paper Cups.
Mash the Bananas in a medium size bowl.
Add the Melted Butter and Mix well using a Rubber Spatula.
Add in the Sugar and Stir well. Keep this Bowl aside.
Take another Bowl, preferably Large. Add the Flour. Mix in the Baking Powder and Baking Soda using a Whisk.
Make a well in the Center of the Flour and Pour in the Prepared Banana Mix in the Middle and Stir using the same Rubber Spatula. Do not over mix. The Flour must get moistened. Mix well only for a minute or two. Do not use any kind of Electric Hand Mixers.
Keep aside 1 tablespoon of Finely Chopped Walnuts and stir in the remaining nuts in the batter.
Fill ¾ of the Muffin Cups. Use a Spoon to fill the Cups.
Sprinkle the remaining nuts on top.
Bake it in the Oven for about 35 minutes approximately, until the Muffins are golden brown.
Cool off the Muffins completely before serving.

I tried the eggless banana muffins and they came out superb. Weall relished them. In fact, my niece had a hard time saving a piece for herself from her colleagues. My son too had to eat them in privacy as he was afraid that he may not ge tto taste them in school break.

Savitha, the cup measurement in the recipe is the US standard 1 cup measurement. I think you have a fluid measurement cup. That's fine. fill the flour upto 220 ml measurement i.e a little less than 8 oz fluid measurement. That's one cup. I hope your query is answered. Please feel free to ask me if you have a query. hi Mythreyee. i'm Satnam,16, from malaysia and i'm a vegetarian punjabi. recently i was looking for banana muffins and that's how i came to this place.
i tried you recipe. it's really nice. but it wasn't as fluffy as i taught,a lil bit dense actually. but anyway it was simply DELICIOUS!! not too sweet. the weird part is that, you said this recipe is for 12 muffins but i was only able to make nine.
i added 2 caps of vanilla.
my oven is in degree Celsius, i just wonder, isn't the temperature too high for muffins? i baked for 30 mins as i forgot to copy the baking instructions.
anyway, thanks again for the wonderful recipe.
well just another question, does the type of banana affect the 'fluffiness' of the muffins?
i added 1 extra because mine were medium in size... will it have an effect?

Satnam: Thank you for trying my recipe. I am sorry that it did not turn out to your expectation. I also want to tell that this will not be too spongy like the muffins with egg but I am sure it will be not be hard. Regarding the banana, we have 4 to 5 inch banana in the US. I don't know if you used this size banana. And the oven part, every oven varies. The next time you try this recipe, use at least 4" bananas and also do not mix too much. Just fold the flour with the wet ingredients. All we have to do is make the flour wet. That's all. Do not forget to preheat the oven. I am sure you will get it well next time. A great recipe. I tried it as a cake today instead of muffin. Though the taste was really good, it did not have a cake texture. While baking it rised well and during cooling, it actually went flat (so it was like a pie). Can you explain what actually went wrong. I always have this problem when I am baking cakes. Kinda feel discouraged to try baking because of this.

Hey Mythreyee ! Just tried these out, and must say they came out awesome :) your instrcutions were accurate ! I just substritued 1/2 cup maida / APF with 80% whole weat flour and 20% quick oats. also added raisins instead of walnuts !! thanks again !
